Chickpea, Peach & Mozzarella Summer Salad
A colourful summer salad with protein, fibre and healthy fats to help keep you full and support steady energy. The peaches add sweetness, while the chickpeas, quinoa, avocado and seeds make it more filling.
Serves 3
Ingredients
200g cooked quinoa / 1¼ cups cooked quinoa
1 x 400g tin chickpeas / 1 x 15 oz can chickpeas, drained and rinsed
2 ripe peaches, sliced
125g mozzarella / 4½ oz mozzarella, torn
½ cucumber, diced
50g rocket / 2 cups arugula
½ avocado, diced
2 tbsp pumpkin seeds
1 tbsp nutritional yeast
2 tbsp fresh mint, chopped
1 tbsp fresh parsley, chopped
Lemon Honey Dressing
1 tbsp extra virgin olive oil
Juice of ½ lemon
1 tsp Dijon mustard
½ tsp honey
Sea salt and black pepper
Method
Place the quinoa, chickpeas, rocket, cucumber, peaches, avocado and mozzarella into a large bowl.
Add the pumpkin seeds, nutritional yeast, mint and parsley.
Mix the dressing ingredients together and pour over the salad before serving.
Toss and serve.
