Salmon with Sweet Potato, Asparagus and Feta

Looking for an easy dinner that is packed with protein, healthy fats and colourful vegetables? This one tray salmon recipe is simple to make, delicious and perfect for busy evenings.

Serves 2

Ingredients

  • 2 small sweet potatoes (300g/10.5oz), peeled and cut into fries

  • 1 tbsp (15ml) extra virgin olive oil

  • 200g (7oz) asparagus, trimmed

  • 90g (3oz) Brussels sprouts, halved

  • 280g (10oz) salmon fillet

  • 1 tsp smoked paprika

  • Juice of ½ lemon

  • 40g (¼ cup/1.5oz) feta cheese, crumbled

  • Sea salt and black pepper, to taste

Method

Preheat the oven to 205°C / 400°F and line a baking tray with parchment paper.

Toss the sweet potato fries with half the olive oil, sea salt and black pepper. Spread them onto the tray and roast for 20 minutes.

Remove the tray from the oven and add the asparagus and Brussels sprouts. Drizzle with the remaining olive oil and season well.

Rub the salmon with smoked paprika, sea salt and black pepper. Place it on the tray with the vegetables.

Return to the oven and cook for 17 to 20 minutes, or until the salmon is cooked through and the vegetables are tender.

Drizzle with fresh lemon juice and scatter over the crumbled feta before serving.
