Chocolate Raspberry Chia Yoghurt Pot

Chocolate Raspberry Chia Yoghurt Pot Recipe

Ingredients

  • 170g (¾ cup) plain Greek yoghurt

  • 5ml (1 teaspoon) fresh lemon juice

  • 4g (1 teaspoon) chia seeds

  • 5g (1 teaspoon) crushed linseeds, also known as ground flaxseeds

  • 40g (⅓ cup) fresh or frozen raspberries

  • 45g (1.6 oz or approximately ¼ cup) 70% or higher dark chocolate, chopped

Method

  1. Add the Greek yoghurt, lemon juice, chia seeds and crushed linseeds to a small bowl, ramekin or dessert pot.

  2. Stir in the raspberries, gently crushing some of them as you mix to create a beautiful raspberry swirl.

  3. Smooth the yoghurt mixture into an even layer.

  4. Melt the dark chocolate in a heatproof bowl placed over a pan of gently simmering water. Alternatively, microwave it in short bursts, stirring regularly until smooth.

  5. Pour the melted chocolate over the yoghurt mixture and spread it evenly to create a chocolate shell.

  6. Refrigerate for approximately two hours, or until the chocolate has completely set.

  7. Crack through the chocolate topping with a spoon and enjoy.
