Oven Braised Pork with Tomato, Broccoli and Cauliflower Rice

Oven Braised Pork with Tomato, Broccoli and Cauliflower Rice

Serves 4

Ingredients

  • 650 to 700 g pork loin or pork chops (1.4 to 1.5 lb)

  • Sea salt and black pepper

  • 1 tbsp olive oil

  • 1 x 400 g tin chopped tomatoes (1 x 14 oz can)

  • 2 garlic cloves, finely chopped

  • 1 tsp mixed dried herbs

  • 100 ml water or stock (⅓ cup)

  • 500 to 600 g cauliflower rice (4 to 5 cups)

  • 300 g broccoli florets (about 3 cups)

Method

  1. Heat the oven to 170°C (340°F).

  2. Warm the olive oil in an ovenproof dish over a medium heat. Season the pork with salt and pepper, then lightly brown on both sides.

  3. Add the garlic and herbs, then pour in the chopped tomatoes and water or stock.

  4. Cover loosely and bake for 40 to 45 minutes, until the pork is tender and cooked through.

  5. Steam the broccoli until just tender and bright green.

  6. Gently heat the cauliflower rice in a pan for a few minutes until soft and fluffy.

  7. Serve the pork with the tomato sauce, cauliflower rice and broccoli.
