Coconut and Flax Flatbreads
Gluten free, fibre rich and surprisingly satisfying. If you are looking for a simple bread swap that feels nourishing rather than restrictive, these flatbreads are a lovely option. They are naturally gluten free, packed with fibre, and work well alongside soups, salads, eggs, or curry. They are also a great choice when you want something comforting but still supportive for energy and cravings.
Makes 4 flatbreads
Ingredients
60 g coconut flour (about ½ cup)
60 g ground flaxseed or linseed (about ½ cup)
½ teaspoon xanthan gum
2 eggs
80 to 120 ml water (⅓ to ½ cup), added gradually
Nigella seeds, to sprinkle
Cumin seeds, to sprinkle
Optional topping
1 egg mixed with 1 tablespoon water, for brushing
Method
Preheat the oven to 180°C or 350°F. Line a baking tray with baking paper.
Add the coconut flour, ground flaxseed, and xanthan gum to a bowl and mix well.
Crack in the eggs and stir. Slowly add water a little at a time until you have a soft, slightly sticky dough. Let it sit for a minute, as coconut flour absorbs liquid quickly, then adjust with a splash more water if needed.
Divide the dough into 4 equal portions. Place each portion between two sheets of baking paper and roll or press into palm sized rounds.
Transfer to the baking tray. If using, brush with the egg and water mix, then sprinkle with nigella and cumin seeds.
Bake for 10 to 12 minutes, until set and lightly golden. Serve warm.
