One-Pan Garlic Prawns & Mixed Vegetables
 One-Pan Garlic Olive Oil Prawns & Mixed Vegetables 
Savour the simplicity with this no-fuss, flavour-packed one-pan meal. It’s all about fresh ingredients, a sprinkle of herbs, and the natural goodness of prawns and vegetables. Healthy eating has never tasted so good!
Ingredients:
        •       Prawns (400g, shelled and deveined)
        •       Asparagus (250g, ends trimmed)
        •       Cherry tomatoes (150g, halved)
        •       Courgettes (1, sliced)
        •       Olive oil (3 tbsp)
        •       Garlic (4 cloves, minced)
        •       Lemon (juiced and zested)
        •       Salt and pepper (to taste)
        •       Fresh parsley, basil, and thyme (chopped)
Method:
        1.      Prep: Season prawns with salt, pepper, and half the lemon zest.
        2.      Prawns: Heat 2 tbsp olive oil in a pan over medium heat. Cook prawns until pink (2-3 min per side). Set aside.
        3.      Veggies: In the same pan, add remaining oil. Sauté garlic, then add asparagus, tomatoes, courgettes, and thyme. Cook till tender-crisp.
        4.      Combine: Add prawns back to the pan with basil, remaining zest, and lemon juice.
        5.      Garnish: Sprinkle with parsley and serve immediately.
