Blueberry Pecan Oat Bake

If you’re looking for a nourishing snack that tastes like a treat this Blueberry Pecan Protein Oat Bake is a winner.

It’s naturally sweetened with fruit and just a drizzle of maple syrup, full of fibre to keep your blood sugar steady and balanced with protein to keep you energised. Unlike many shop-bought baked goods that are often loaded with sugar, this version is full of ingredients that support women’s health especially for those of us navigating the 40 plus years.

This bake is also versatile: enjoy it warm with some yoghurt for breakfast, or slice it up and store in the fridge for a quick grab-and-go snack during a busy day.

Ingredients (serves 6)

  • 200 g (2 cups) rolled oats

  • 350 ml (1½ cups) unsweetened almond milk (or dairy milk if you prefer)

  • 100 g (½ cup) plain Greek yoghurt

  • 2 medium eggs

  • 2 tbsp pure maple syrup

  • 1 tsp cinnamon

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 150 g (1 cup) blueberries, fresh or frozen

  • 50 g (½ cup) pecans, roughly chopped

  • 2 tbsp ground flaxseeds for extra fibre & omega-3

Method

  1. Preheat oven to 180°C / 350°F and lightly oil a baking dish.

  2. In a blender, combine oats, milk, yoghurt, eggs, maple syrup, cinnamon, baking powder, vanilla, flaxseeds, and salt. Blend until smooth.

  3. Pour into the baking dish, scatter blueberries and pecans on top, and gently press them into the mixture.

  4. Bake for 30–35 minutes until golden and a toothpick comes out clean.

  5. Allow to cool slightly before slicing. Serve warm or chilled.
