Black Bean Quinoa Burgers
Try my easy Black Bean Quinoa Burgers for a healthy, meat-free meal. Packed with protein and flavour, they’re a great addition to any diet.
Ingredients:
• 400g (about 2 cups) cooked black beans, rinsed and drained
• 190g (1 cup) cooked quinoa
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 1 carrot, grated
• 1 red bell pepper, finely chopped
• 2 tbsp chia seeds mixed with 6 tbsp water
• 70g (½ cup) whole wheat breadcrumbs, or substitute with equal amounts of ground oats or almond flour for a gluten-free option
• 1 tsp ground cumin
• 1 tsp paprika
• ½ tsp ground coriander
• Salt and pepper, to taste
• Olive oil for frying
Instructions:
- Mash the black beans in a large bowl. Mix in the quinoa, onion, garlic, carrot, bell pepper, chia gel, your choice of ‘breadcrumbs’, cumin, paprika, and coriander. Season with salt and pepper. 
- Shape the mixture into patties, about ½ inch thick. 
- Heat olive oil in a pan over medium heat. Fry the patties for about 5 minutes on each side until golden 
- Serve with a salad of your choice.
