Avocado Toast with Fried Eggs, Goat Cheese and Fresh Dill

How about this delicious avocado toast with fried eggs, goat cheese and fresh dill for breakfast? Such a great combination of tastes, Enjoy!


Ingredients
Coconut oil
2 eggs
2 slices sourdough bread, toasted
1 avocado
kosher salt, to taste
black pepper, to taste
1 tablespoon crumbled goat cheese
Pumpkin and sunflower seeds to top it with or a handful of walnuts.
fresh dill, to taste

Directions
In a medium pan, heat a thin layer of coconut oil over medium heat. Add eggs and cook for about 3 minutes, or until cooked to your liking.
Mash avocado flesh with a fork and divide between the toast. Season to taste with salt and pepper. Top each slice of toast with a fried egg and sprinkle each with crumbled goat cheese. Sprinkle with fresh dill and seeds. Enjoy!
