Falafel Mezze Bowl with Tabbouleh & Lemony Tahini Drizzle
Fresh, crunchy, and full of flavour, this bowl ticks all the boxes. It’s one of those meals that feels like a treat but is actually packed with protein, fibre, and loads of goodness. You can use shop-bought falafel or homemade, depending on time and mood.
Perfect for lunch or dinner, and great for prepping ahead.
What you need (serves 2):
Main bowl:
6 falafel (homemade or shop-bought – approx. 200g / 7 oz)
100g cooked quinoa or bulgur wheat (½ cup)
½ cucumber, diced
1 large tomato, chopped (or a handful of cherry tomatoes)
2 big handfuls of baby spinach or lettuce
3–4 tbsp hummus
Tahini drizzle:
1½ tbsp tahini
Juice of ½ lemon
1–2 tbsp water to thin
Pinch of garlic powder and sea salt
Optional extras:
Chopped parsley or mint
Sprinkle of za’atar or sumac
A few olives or pickled onions if you fancy
How to make it:
Warm the falafel in the oven or air fryer.
Toss the quinoa with parsley, cucumber, and tomato for a quick tabbouleh.
Whisk the tahini, lemon, water, and seasoning until smooth and pourable.
Assemble the bowl with greens at the base, then add falafel, tabbouleh, hummus, and finish with the tahini drizzle.
